Duration
Three days or 18 hours on a modular basis plus a 2 hour examination. This can be run as an in house or open course.

The is a recognised qualification from the Chartered Institute of Environmental Health. This programme is an ideal way for chefs and food operative supervisors to broaden their knowledge and progress to the advanced level certificate.

Managers and Supervisors within the catering and hospitality business along with chefs and anyone that has a direct influence on the controls and operation of their specific business.

This course takes the delegate a step forward from the basic principle of food hygiene. At this level a delegate will become engaged in understanding the need for correct systems and procedures to be in place and implemented by their teams within the workplace.
Course Content
Assist hazard analysis programmes
Carry out hygiene audits
Implementation of good personal hygiene standards
Supervise all food handlers and advise on any hygiene issues
Write and implement hygiene policies and practices where required
Train and retrain staff

All delegates will receive a copy of the CIEH ‘Food Safety For Supervisors’ and a workbook containing information and exercises compiled by Training in Excellence.
